  1. Prepare the vegetables: drain and finely chop the artichokes into roughly 1 cm pieces. If using frozen peas, thaw and drain; lightly mash with a fork leaving some small pea bits for texture.
  2. In a medium bowl, beat the egg then add the chopped artichokes, mashed peas and wholemeal flour. Mix until you have a soft, slightly sticky batter. If it feels too wet, add an extra 5–10 g of flour.
  3. Heat a non-stick frying pan over medium-low heat and add enough olive oil to lightly coat the surface (about 10 g). Reduce the heat slightly so the fritters cook through without burning.
  4. Spoon out small tablespoons of batter and gently flatten into 4–5 cm patties with the back of the spoon. Cook in batches, leaving space between fritters.
  5. Cook for about 3–4 minutes per side until golden and set; lower the heat if they brown too quickly. Turn carefully with a spatula and cook the other side. Cut one open to check it is cooked through and not gooey in the middle.
  6. Transfer cooked fritters to a plate lined with kitchen paper to drain any excess oil and let them cool to lukewarm before offering to your toddler.
  7. For baby-led weaning: offer whole or cut into thicker strips depending on your child’s grasp and chewing ability. Always supervise during meals. No added salt or strong seasoning; you can add a tiny pinch of dried oregano if desired once your toddler is older and has tolerated herbs.
Summary

These soft artichoke & pea fritters are toddler-friendly finger foods suitable for babies 10+ months practicing baby-led weaning. They are mild in flavour, easy for little hands to hold and provide vegetables and protein in a simple, dinner-like option similar to breakfast pancakes.

Storing

Keep in an airtight container in the fridge for up to 48 hours. To freeze, place cooked fritters in a single layer on a tray until firm, then transfer to a freezer bag for up to 1 month. Reheat thoroughly until hot throughout and cool to a safe temperature before serving; for frozen fritters, reheat from frozen in a low oven (150–160°C) for 10–15 minutes.

Allergies & Side effects

Contains egg and gluten (wholemeal flour). Avoid if your child has known allergies to these ingredients. Do not add salt or honey for infants. Always supervise to reduce choking risk; cut to appropriate size for your child and ensure they can handle this texture before offering whole pieces.
